Rajasthani cooking was influenced by the hawkish modus vivendi of its inhabitants and ofcourse on the availableness of ingredients in this part. food that can last for a number of days and can be eaten without heating dominates the foodhabit out of necessity. Scarcity of water, fresh green vegetables have had their effect on cooking. In the desert belt of Jaisalmer, Barmer and Bikaner, the usage of water is somewhat replaced by buttermilk and clairied butter. the best known Rajasthani delicacy is the combination of dal, bati and churma however sweets like Mawa Kachori from Jodhpur,from Pushkar and Ghevar from Jaipur are also famous
