One of the Punjabi dishes, MURG MAKKAI is my favorite. My mom makes it to the perfect....Ingredients: 4 medium sized chicken breasts skinless & boneless 2 tblsp yogurt 1/2 tsp garam masala powder 3 medium tomatoes 2 medium sized capsicums 1/2 tsp turmeric powder 5 - 6 garlic flakes 1 1/2 tblsp oil 1 tsp red chilli powder 1/2 cup coriander leaves 1 inch ginger salt to taste 1 cup corn kernels 1 tblsp coriander powder How to make murg makkai : Clean, wash and cut chicken breasts into one centimeter sized square pieces. Wash capsicums, halve, de-seed and cut into one centimeter squares. Take off and finely cut ginger and garlic. Wash and puree tomatoes in a blender. Wash and cut coriander leaves. Boil corn kernels in three to four cup of salted water till soft. Remove and keep aside. Heat up oil in a non-stick pan, stir-fry cut ginger and garlic briefly. Mix in pureed tomato and stir fry on medium high flame heat, stirring frequently. Stir in red chilli powder, turmeric powder and coriander powder. Mix well. Mix in chicken pieces and stir fry on medium heat up for five to six minutes, stirring regularly. Mix in skimmed milk yogurt, cooked corn kernels, capsicum and salt. Mix well, lower heat, cover and continue to stir fry till masala is a little thick and chicken pieces are completely cooked. Mix in garam masala powder and cut coriander leaves, mix gently and serve hot.

Punjabi cuisine is not subtle in its flavor. There are no intricate marinades or exotic sauces but it has full-bodied masalas spices cooked with liberal amount of pure desi ghee clarified butter always served with a liberal hand of butter or cream. Milk and its products are an essential part of every day cookery. Curd and buttermilk are also an essential concomitant with every Punjabi meal. Predominantly wheat eating people, the Punjabis cook rice only on special occasions. Its never eaten plain or steamed for steamed rice implies that somebody is sick. Rice is eaten always with a flavoring of cumin or fried onions with Rajma or Kadhi. Rajma Red Beans with rice or rice with Kadhi is eaten on holidays or on festive days. In winter rice is cooked with Gur Jaggery or with peas called matarwale chawal or as a delicacy called Rao Ki Kheer which is rice cooked on very slow fire for hours together with sugar cane juice.

In Punjab itself, there are differences in flavors and style. For example, people around Amritsar prefer well-fried stuffed paraunthas and milk sweets. The people of Doaba region eat more of them in the Malwa region Bajra ground maize khichadi is a delicacy. Makki Ki RotiThere are of course certain dishes, which are part and parcel of Punjab, and their very mention conjures up the rich flavor of the state. Mah ki Dal, Sarson Da Saag and Makki Di Roti, meat curry like Roghan Josh and stuffed paraunthas can be found in no other state except Punjab. The food of Punjab is suitable for those who burn up a lot of calories while working in the fields and tilling their small acres. For the urban folk, however, eating even one dish is enough because life in the cities is so sedentary. The main masala in a Punjabi dish consists of onion, garlic, ginger and a lot of tomatoes fried in pure ghee. The people of Punjab prefer rotis or chapatis than rice. In fact their staple food is Makki Di Roti and Sarson Da Saag. They can have rotis or chapatis with just onions only if they do not have a curry or vegetable along with it. Another interesting feature is lassi buttermilk which is a preparation of curd and is quite common among the people of Punjab.

Hey, I stayed in Punjab for 3 yrs and I miss thoses dishes. This post made me real nostalgic Punjabi recipe is prepared in delicious gravy and punjabi parathas melted in butter/ ghee. Punjabi dishes is simple, healthy and yet has its own fascination. The famous dishes like matar paneer, dal makhani, parathas, bature, lassi are popular all over India. Did you people ever have GUR POLI ??? Its awesome It is mainly prepared during Holi, however, I collected these for the entire year. Gur poli made with jaggery, ghee mixed with cardamom. It is then stuffed into the roti. This is one of the most popular sweet during Holi. In the south, they add turmeric and the Gur poli turns yellow.
